Key Ingredients

  • All-purpose flour – provides structure and a soft, chewy texture.
  • Butter – adds rich flavor and helps create tender cookies.
  • Brown sugar – gives moisture and a deep, caramel-like sweetness.
  • Granulated sugar – balances sweetness and ensures crisp edges.
  • Eggs – bind the ingredients and add richness.
  • Vanilla extract – enhances the overall flavor.
  • Baking soda – helps the cookies spread and rise properly.
  • Chocolate chips – bring that classic, melty chocolate goodness.
  • Toffee bits – add a buttery crunch and rich caramel flavor.
  • Salt – balances the sweetness and enhances all the flavors.

How to Make Toffee Chocolate Chip Cookies

  1. Mix together sugars & butter – Mixing the butter and sugars together, is what will give the cookies the soft center and crispy edges.
  2. Add in the eggs – Eggs is the key ingredients to make our cookies moist, so mix it in the batter until well combined.
  3. Add the dry ingredients – Gradually add the dry ingredients on the mixture, making sure that you do not overmix!
  4. Chocolate and Toffee – Lastly, add in the chocolate chips and toffee bits and mix just until combined.
  5. Chilling the dough – The dough might be a bit sticky, so chilling the dough even for 20 minutes in the fridge is going to help the cookies hold their shape and build up their flavour.

How to Store

To store toffee chocolate chip cookies, place them in an airtight container at room temperature, where they will stay soft and fresh for about 4–5 days. Keep them in a cool, dry spot and separate layers with parchment paper if stacking to prevent sticking. For longer storage, you can refrigerate them for up to a week, though allowing them to come back to room temperature will help restore their soft, chewy texture. If you’d like to keep them even longer, freeze the cookies in a sealed freezer bag or container for up to 2–3 months, then thaw at room temperature or warm briefly before serving for that fresh-from-the-oven taste.

  • Let cookies cool on the tray for a few minutes before transferring to a rack.

Frequently Asked Questions

Why are my cookies spreading too much?

This can happen if the butter is too soft or melted, or if the dough wasn’t chilled. Try chilling the dough and checking your flour measurement.

Can I use salted butter instead of unsalted?

Yes, but reduce or omit any added salt in the recipe to avoid overly salty cookies.

What makes these cookies chewy?

The combination of brown sugar, proper flour measurement, and slightly underbaking helps create a soft, chewy texture.

Can I make the dough ahead of time?

Absolutely. You can refrigerate the dough for up to 48 hours or freeze it for later baking.

Why did my cookies turn out dry?

Overbaking or using too much flour are the most common reasons. Be sure to bake just until the edges are set.

Can I make these cookies gluten-free?

Yes, you can use a 1:1 gluten-free flour blend, though texture may vary slightly.

Ingredients

  • 200 gr unsalted butter , browned & cooled
  • 2 eggs , room temperature
  • 180 gr brown sugar
  • 70 gr granulated sugar
  • 240 gr all purpose flour
  • 1 tsp baking soda
  • pinch of salt
  • toffee bits & chocolate chips , measure by heart

Method

  1. In a medium bowl, add the flour, baking soda, salt and mix. Set this aside.
  2. In a large bowl, add your browned butter & both sugars. Mix until it's all combined. Add in the eggs and mix again.
  3. Add the dry ingredients to the wet ones and fold just until it's all incorporated.
  4. Fold in the chocolate chips & toffee bits. Do not overmix your dough!
  5. Cover your dough with a plastic wrap and place in the fridge for 20 minutes to 1 hour. In the meantime, preheat your oven at 175℃ and prepare your baking tray with parchment paper.
  6. With a cookie scoop, make scoops from the dough and place them on your baking tray. I like to add a couple extra toffee bits & chocolate chips on top – that's optional.
  7. Bake these for 10-12 minutes. Once you take them out, remember that the cookies will continue baking on your tray, so make sure they are one or two minutes underbaked.
  8. Transfer the cookies in a cooling rack to allow them to cool down completely and enjoy!
