Ingredients
  

  • 200 gr unsalted butter , browned & cooled
  • 2 eggs , room temperature
  • 180 gr brown sugar
  • 70 gr granulated sugar
  • 240 gr all purpose flour
  • 1 tsp baking soda
  • pinch of salt
  • toffee bits & chocolate chips , measure by heart

Method
 

  1. In a medium bowl, add the flour, baking soda, salt and mix. Set this aside.
  2. In a large bowl, add your browned butter & both sugars. Mix until it's all combined. Add in the eggs and mix again.
  3. Add the dry ingredients to the wet ones and fold just until it's all incorporated.
  4. Fold in the chocolate chips & toffee bits. Do not overmix your dough!
  5. Cover your dough with a plastic wrap and place in the fridge for 20 minutes to 1 hour. In the meantime, preheat your oven at 175℃ and prepare your baking tray with parchment paper.
  6. With a cookie scoop, make scoops from the dough and place them on your baking tray. I like to add a couple extra toffee bits & chocolate chips on top - that's optional.
  7. Bake these for 10-12 minutes. Once you take them out, remember that the cookies will continue baking on your tray, so make sure they are one or two minutes underbaked.
  8. Transfer the cookies in a cooling rack to allow them to cool down completely and enjoy!
