Too much moisture from the apples or underbaking can cause this. Make sure the apple filling isn’t too wet and bake until the edges are set.
Dough: In a medium bowl, add the flour, baking soda, baking powder, cinnamon & salt. Set aside.
In a large bowl, add the soft butter and both sugars and mix until everything's combined.
Add in the egg and vanilla extract and mix well. Whisk in the applesauce and slowly fold in the dry ingredients. Mix just until everything's incorporated and then place in the fridge for 10 min.
Make big scoops of the cookie dough and place in your prepared tray. Bake the cookies for 10-12 min or until the edges are set and the center looks a bit soft. Allow them to cool in the tray and then transfer to a cooling rack.
Crumble: In a medium bowl, add all the ingredients (soft butter, sugar, cinnamon, salt & flour) and mix with your fingertips until you get a crumbly texture. Pour this in a baking tray with parchment paper and bake at 180C for 5-10 minutes. Once baked, leave on the side to cool.
Icing: In a large bowl, add the softened butter and cream cheese and mix until it's smooth. Add in the vanilla extract, salt and mix well. Lastly, add the powdered sugar and mix until it all comes together smoothly.
Assemble: Once the cookies are cooled, add a good amount of icing on top, sprinkle small cut apple pieces and crumble over it. Optional: drizzle some caramel on top of everything and enjoy!
